Underground cellar · 16th Century · Biosphere Reserve

A hidden gem in the heart of the mountains combining history, tradition, aromas and flavours in an experience that time never forgets.

Living history

Five centuries underground

Dating back to the early 16th century, this traditional mountain winery has survived the passage of centuries with its original architecture intact. Carved into living rock, its stone walls hold the silence and cool air that made wine production possible for generations.

It has been lovingly restored to offer visitors an authentic experience: the scent of damp earth, the candlelit shadows and the sound of time standing still.

The five-century secret

Every visit ends with a unique moment: we reveal a secret this winery has jealously kept for over five hundred years. A secret only those who cross its threshold ever come to know.

Wine with identity

Rufete, the soul of the Sierra

The Rufete grape is the native variety of the Sierra de Francia, unique in the world and with Protected Designation of Origin. A light, elegant wine with its own character that reflects the terroir where it grows.

At the winery you can taste different expressions of Rufete — young, aged and organic reserve — paired with the finest Iberian charcuterie and artisan cheeses from the region.
